How We Work

M&K Meats guarantee the best products and service by applying traditional butcher shop values to a commercial scale business.

We began as a simple single unit butchers based in Dublin and even though today we work out of a factory unit on much larger orders we still like to do things properly; sourcing food from top quality farms, not just the cheapest, taking the time and expense to properly hang, age, smoke and cure meats giving them a full bodied flavour like nothing else you’ve ever tried! Whilst the care of the meat is all about traditional techniques, the care of our customers takes a much more modern approach that is outlined below.

Complete system of quality control throughout the supply chain
We individually visit every farm, market, abattoir and supplier to inspect their facilities, workmanship and HACCP certificates, establishing our quality expectations long before we work with them.

Our 24 hour production crew are also fully trained in quality standards and utilise a computer logging system which enables complete traceability of any piece of meat at any stage in the storing, aging or dispatching process.

All orders are carefully checked by our production manager to ensure the right quantities and cuts to meet your specification, and this is double checked on dispatch.

Traceability and Safety
The ability to trace back products all the way through the supply chain to the farm of origin is essential in the modern food industry and we’ve invested heavily in a system and database that can deliver exactly that. Every item that passes through M&K goes through the same process;

  • Checked for freshness and logging system on arrival
  • Trace labelled, dry aged and butchered in the production hall
  • Products are invoiced and then checked with a metal detector
  • Distributed nationwide via refrigerated vans

We also carry out regular laboratory tests on samples of all our meats and have recovery policies in place to enact recalls should it ever become necessary, our factory was purpose built in 2003 and is intelligently divided into key sections, each individually climate controlled for optimum conditions guaranteeing you beautifully prepared meats.
